EATING
Littleneck Clams (also called Cockles) are found in harbours and estuaries around New Zealand. They are a smaller-sized clam (perfect for Vongole) that is wild-harvested. Littleneck clams have a salty flavour, with a small, tender, slightly chewy meat. They are ideally used in pasta dishes or seafood chowder. Rinse the clams under running water and scrub if needed to remove residual sand. We sell our clams live, by the KG.
STORING
Clams can be stored for a couple of days in a domestic fridge with a damp tea towel or cloth covering them. Drain the container they are stored in regularly, as they are likely to release liquid.
HARVEST AREA
Hand-dredged from estuaries and harbours in Otago by Southern Clams.
AVERAGE WEIGHT
Usually 3-5cm in length.
